Today is bank holiday in Barcelona and I finally had time to try some new recipes.
If you have a pregnant friend, who has desperate longings for marzipan, this one helps in case of emergency:)

Apple & Marzipan Muffins with spelt flour
****************************************
Ingredients A:
*150g spelt flour
*1 1/2 teaspoons baking powder
*50g chopped almonds
*1 pinch of ground cinnamon
*1 apple, cutted in small cubes

Ingredients B:
*2 eggs, whipped
*120g sugar
*1/2 envelope vanille sugar
*120g softened butter or margarine
*1 pinch of salt
*100g marzipan (raw mixture), crumbed

***********************************************

Preheat oven, 200ºCelsius
Put 12 paper cases in a muffin pan.
Put ingredients A in a large bowl and stir.
Beat ingredients B(except marzipan)in a separate bowl with an electric mixer until smooth, then add the crumbed marzipan and stir. Add ingredients B to ingredients A and stir until combined.
Divide the mixture among cases and let bake for 17-20 min.
Bon apetit!!!!

You need to see this! These plant creations made me smile, after hours and hours of staring at boring technical sketches in Adobe Illustrator at work :)
Check out  Elsa Mora’s website – the paper cutouts, dolls, illustrations etc of this cuban artist living in LA are stunning…

I am back in Barcelona and had some really nice chilled days back in rainy Germany. In the only few minutes of sun I made this picture of this freshly baked raspberry shortcake -
Here’s the recipe – it’s easy and makes you still feel like summer :heart:

Cakes
******
*340g all purpose flour
*1 single sachet of baking powder
*240g butter, softened (not melted)
*400g sugar
*4 eggs
*240ml milk
*1 teaspoon vanilla extract
*1 handful fresh raspberries
Oven: 170º – ca 22min

Stir the soft butter until creamy, add the sugar and mix until well combined. Then add the eggs and beat well.
Mix the dry ingredients (flour and baking poweder) separately and add them alternating with the milk and the vanilla extract in 3 parts , mixing well every time. Then add the raspberries and stir in with a spoon.
Grease a muffinpan(12 muffins) and fill the mixture in.
Bake for ca 22 minutes then let cool for 15 minutes before removing the cakes from the pan.

Frosting
*********

*250g white chocolate
*340g cream cheese
*125g butter (room temperature)
*1 teaspoon fresh lemon juice

Stir the creamcheese until smooth.
Melt the chocolate in the microwave or water bath and stir slowly in the creamcheese.
Stir the soft (not melted) butter in and add the lemon juice.
Add a hint of red food colour and let the mixture cool in the fridge for 30 min before frosting the cakes.

I took a long weekend off from fashionweek and handovers and went home to the black forest to breathe some fresh air, see friends and family, buy some baking stuff I cannot find in Barcelona
and look for a nice cuckoo clock.
(I’ve given up biding on them in ebay, it seems they have become really trendy)

I didn’t win the euromillion:( – but the satisfied smiles of the people eating my muffins yesterday was an even bigger price…
It was my first big muffin/cupcake catering as part of a “goodbye summer” afternoon tea @ my friends house, in the nicest little garden you can possibly have in the center of Barcelona.
I made some new salty muffins – try the Mini Couscous Muffins – it’s easy to make and refreshingly different….
Mini Couscous Muffins
*150g couscous + 180ml water
*240g flour
*2 tablespoons baking powder
*2 tablespoons white sugar
*Salt
*1 tablespoon cumin seeds
*1 tablespoon ground coriander
*1 large egg
*3 tablespoons olive oil
*1 tablespoon lemon oil (or 1/2 tbs lemon zest)
*1/2 tablespoon lemon juice
*2 tablespoons chopped fresh parsley

*red pesto or pureed sundried tomatoes for topping
********************************
*Pour boiling water over couscous and leave for 5min, then fluff with fork
*Mix dry ingredients in a bowl
*Mix egg + oils with electric mixer, then add couscous and dry ingredients
*Stir in lemon juice and parsley
*Place the mixture in ca 24 mini papercups in a muffin pan
*Bake for ca 20 min @175ºC, then let cool before placing the red pesto/puré topping

Today a green parrot shit on me while I was riding home on my bike. If it’s good luck to get hit by a pigeon , I guess a green parrot should bring me the euromillion jackpot this weekend…

I am not a big bird fan, but since I bought out all the fake birds in a craft shop in Tokyo last year together with my friend Vera, these little critters somehow grab my attention…
