I am really enjoying making birthday cakes lately. If I’d only find a place in Barcelona where they sell fondant to decorate, as I’ve been using marzipan instead and you can’t achieve the same colours… Let me know if you if you have any tips …Gracias! :heart:

This is a cheer-up-your-day-muffin – after a far too short weekend again. I guess my friend Astrid is right – Marzipan has a therapeutic effect on women, although I only started to like it some years ago. Today I forgot all technical sketches, sweater measurements, trend for winter 2010 and buying meetings after coming home and eating one of these…. :heart:

Raspberry Marzipan Muffins
( adapted from Anne’s Food)

Ingredients for 12-14 Muffins

*300g flour
*175g brown sugar
*2 Tsps baking powder
*1/2 Tsps salt
*1 teaspoon vanilla extract
*1 egg, beaten
*250ml soymilk (or cow’s milk)
*150ml melted buttter

Filling:

*4-6 Tbsps raspberry jam
*180g marzipan raw mixture

Preheat the oven@ 190ºC
Roll the marzipan and cut into 24-28 equal pieces and roll to a flat circle; add a small amount of raspberry jam on top it and cover with the other half.

In a bowl mix flour, sugar, salt and baking powder.
In another bowl mix the egg, milk, melted butter and vanilla extract until well combined. Then add the dry ingredients but by bit and stir well.

Add half of the dough into a muffin papers in a muffin pan. Place the marzipan and cover with the other half of dough.
Bake for 20 min and enjoy :heart:

Today is bank holiday in Barcelona and I finally had time to try some new recipes.
If you have a pregnant friend, who has desperate longings for marzipan, this one helps in case of emergency:)

Apple & Marzipan Muffins with spelt flour
****************************************
Ingredients A:
*150g spelt flour
*1 1/2 teaspoons baking powder
*50g chopped almonds
*1 pinch of ground cinnamon
*1 apple, cutted in small cubes

Ingredients B:
*2 eggs, whipped
*120g sugar
*1/2 envelope vanille sugar
*120g softened butter or margarine
*1 pinch of salt
*100g marzipan (raw mixture), crumbed

Preheat oven, 200ºCelsius
Put 12 paper cases in a muffin pan.
Put ingredients A in a large bowl and stir.
Beat ingredients B(except marzipan)in a separate bowl with an electric mixer until smooth, then add the crumbed marzipan and stir. Add ingredients B to ingredients A and stir until combined.
Divide the mixture among cases and let bake for 17-20 min.
