I’ve been meaning to try this recipe for ages, but never found the time until last week. Yes, it might sound a bit too christmasy for this time of the year, but it was sooo good and the ginger gave a really fresh kick. And you know I like to break ranks:)

Chai Cupcakes with Honey & Ginger Cream Cheese

Ingredients:
*160ml soya milk
*3 chai tea bags
*1 teaspoon vanilla extract
*2 eggs
*1 egg yolk
*115g all purpose flour
*2,5 teaspoons baking powder
*200g brown sugar
*1 teaspoon ground cinnamon
*0,5 teaspoon ground cardamom
*110 g butter, softened
*hint of salt

Preheat oven@180ºC. Line 20-22 silicon muffin cups with paper cups.
Bring the soya milk to cook slowly and take off the heat. Add the 3 tea bags and leave them for ca 5minutes, before removing. Let the chai milk cool.
In a bowl combine eggs, egg yolks, 1/2 of chai milk and vanilla.
In another bowl combine the dry ingredients(flour, sugar, baking powder, cardamom, cinnnamon and salt), then add the other half of chai milk and the butter and mix until well combined and fluffy.
Then add the egg/milk mixture in 3 parts, mixing well after each addition.
Fill the paper cups and bake for 18-20min, doing the tooth pick test before removing from the oven.
Let cool completely before frosting.

Honey Ginger Cream Cheese Frosting

Ingredients:
*170g cream cheese
*250g powdered sugar
*120ml liquid honey
*85g butter, softened
*a hint of freshly grated ginger( ca 1tsp) – I ended adding 2, as I love the ginger taste.
Mix the cream cheese until soft and add the butter – mix well until creamy.
Then add the powdered sugar, stir in well and add the honey and ginger.If you want a stiffer texture add more powdered sugar. Mix everthing until well combined and frost the cupcakes

Baking and fashion – the 2 things I spent most of my time with:) It’s funny how fashion and “cuisine” are related – lots of fashion designer have their own restaurant, bar or pastry shop… I guess if you are a creative person you have the need to find beautiful new things 24/7 and cooking/baking exciting new recipes calms you down a bit and makes you happy! Recently I’ve found lots of fashion editorials related to cute pastries – aren’t they nice? Have a great weekend
